1 Tokyo Metropolitan Government Ordinance for the Regulating of Handling of Globefish
Because globefish is a food which contains toxic substances, the Tokyo Metropolitan Government prohibits the handling of globefish except by licensed globefish cooks in order to ensure food safety for residents of Tokyo. In addition, a business planning to handle globefish must have a dedicated, licensed globefish cook at their facility and obtain certification from the Governor in advance. (a facility that has received certification is called a “certified facility”).* A licensed globefish cook
is a cook who has been licensed by the Governor to handle globefish with the title of Licensed Globefish Cook.

2 Obligations of licensed globefish cooks
Licensed globefish cooks must comply with the following items when participating in the handling of globefish. In the event of violation, his/her license as a licensed globefish cook will be subject to revocation. The names of violators are subject to public disclosure.- No sale of globefish and its toxic parts (except parts included in unprocessed edible globefish) other than species of edible globefish
- No sale of unprocessed edible globefish to anyone other than licensed globefish cooks
- No participation in the handling of globefish anywhere other than at a certified facility
- Ensure the removal of the toxic parts and thoroughly wash the edible parts after their removal as well as the utensils used during the process
- Store the removed toxic parts in a lockable container to avoid the contamination of other food or waste
- Dispose of the removed toxic parts stored in the lockable container in a safe way without causing any hygiene hazards, such as by incineration
- When freezing edible globefish, use a quick-freezing method
- When defrosting edible globefish, carry it out promptly using running water, process the defrosted edible globefish immediately, and avoid re-freezing.
- Take measures to prevent loss or theft of globefish during transportation or storage
- Do not assign or lend the license to another person
3 Things that are allowed at a certified facility
Licensed globefish cooks with specialized knowledge are allowed to sell, store, and process (removing the toxic parts including the liver) unprocessed globefish. Certified restaurants must display the certificate. <Beware of the sale of unprocessed globefish through online shopping> Cases of selling unprocessed whole globefish through online shopping have been reported. It is prohibited by law to sell unprocessed globefish to general consumers. When purchasing unprocessed globefish, please confirm if the seller has certification for handling globefish, and keep all purchase records. |
